Veggie Turkey Mexican Skillet

I am so excited to share this easy dinner recipe that our family absolutely loves. This veggie Mexican skillet is a one pot meal which means less dishes. This dish comes together quickly and is easy to prepare. There are a lot of veggies to chop but it is a breeze with my favorite veggie chopper. It cuts down the chopping time immensely and is actually really fun to use. It is a must have and a game changer. I am always looking for easy dinner recipes for busy nights and this one is perfect.
It has lots of veggies and protein making it an excellent weight loss meal. My entire family loved it. The zucchini is everything in this one! It is definitely the best part in my opinion. So make sure to add this to your weekly meals during summer when your garden is exploding with zucchini. All the spices in this give it SO much flavor. You can use ground beef in this recipe instead of the ground turkey.

What You’ll Need:

-1 lb. ground turkey (can use ground beef too)
-1 cup salsa
-2 cloves garlic
-1/2 small onion (more if you love onions)
1 red bell pepper
-1 green bell pepper
-2 small or 1 large zucchini
-1/2 c. Cheddar cheese
-1 tsp. chili powder
-1 tsp. Cumin
-salt and pepper to taste.

Method:

Brown meat in pan with the minced garlic and diced onions. While meat is cooking, chop all the other veggies into bite size pieces or smaller. Add into meat and sauté til tender. Add spices and top with cheese.
