Slow Cooker BBQ Pineapple Chicken

Does anyone else survive off of slow cooker meals? They come in clutch for me at least twice a week. It is so nice on busy days to come home and have dinner be waiting for me. Seriously though, what is better than not having to cook after going non stop all day? Maybe I should start doing them 3-4 times a week. This slow cooker BBQ pineapple chicken is bursting with flavor. I love the sweet and savory together. Plus it is high protein and low carb.

Usually I am a lover in all things turkey bacon but I think this recipe is actually better with regular bacon. I also use my favorite BBQ sauce Stubbs. It has minimal ingredients and the flavors are fantastic.

This meals come together quickly. You layer the ingredients in the slow cooker and you are done. It takes no prep besides that. You could put it over rice or mashed potatoes.

You will need:

-16 oz chicken breast (I do 4 oz pieces)

-4 slices of bacon (you can do more)

-1/2 c. diced red onion

-1 small can pineapple tidbits

-salt and pepper

-BBQ sauce

Spray slow cooker with non stick spray. Place chicken in bottom of the slow cooker and season with salt and pepper if desired. Top each with 1 piece of bacon (can wrap around too). Top with red onion, pineapple, and BBQ sauce. Cook on low for 4-5 hours.

I left the BBQ sauce off my kids pieces and it still turned out yummy. For some reason they don’t love meat being cooked in BBQ sauce. They like to dip the chicken in BBQ sauce but for some reason do not like it cooked in it.
