Protein Oat Waffles

I am slightly obsessed with waffles. I have eaten this breakfast pretty much every day for the last 3 years and the love for these continue. When I first started counting macros, I had a hard time fitting them in for breakfast because they had too many carbs and not enough protein. After trying many different recipes to increase the protein, this one is by far my favorite. The texture and the taste are fantastic! I love to add blueberries, pumpkin, or chocolate chips in the batter when I cook them. I love topping them with strawberries or peanut butter.

This recipe is better used as waffles instead of pancakes. I did not like the texture at all when I tried them as pancakes. Plus waffles are 100 times easier to cook in my opinion. Anyone else always burn their pancakes? I have hard time waiting for them to cook so I try to multitask and they end up burnt every single time. Whenever I ask my kids if they want pancakes, they answer, “yes, but not brown ones mom.” Waffles are the only way to go in my opinion.

In a blender mix:

-40 g oats

-75 g cottage cheese

-100 g egg whites

-vanilla to taste

-cinnamon to taste

Cook in a waffle maker until golden brown.

The batter works a bit better if it’s refrigerated for a little bit before cooking but can be used right away too.

This makes 2 waffles. I love this waffle maker my mother in law got me for Christmas. We can whip waffles out so fast with it. This is my favorite syrup. It has great ingredients and tastes so delicious. I could literally drink it.
