Homemade Chicken Fingers

Who doesn’t love a good chicken finger? Don’t let these homemade chicken fingers intimidate you because they are so easy. My kids all love these and last time i made them, my husband told me it is one of his all time favorite dinners. Chicken fingers or strips are one of my favorite things to order at restaurants when I am pregnant. While the breading is delicious, it’s also usually greasy from being fried. That type of food doesn’t usually sit well with my stomach. I was thrilled when I found this recipe and saw that they are baked. Here is what you will need:
-1 lb chicken breasts, cut into finger size strips or a bit bigger (if you see the picture of the pan, we actually do all different sizes)
-2 cups bread crumbs ( I like Panko)
-2.5 TBS grated Parmesan cheese
-1 TBS garlic powder
-1/4 tsp. pepper
-3 TBS olive oil
Preheat the oven to 350 degrees. Put the olive oil in a medium sized bowl. Mix together bread crumbs, Parmesan cheese, garlic powder, and pepper together in a separate medium sized bowl.
Dip each chicken finger in the olive oil, and then the bread crumb mixture until well coated. Place on baking sheet. I can usually fit the full pound of chicken on one big cookie sheet.
Bake for 20-25 minutes. They should be starting to turn golden. I like to then turn the oven to broil for a couple more minutes to make them a little crispy. Enjoy with your favorite dipping sauce. I also like to have mine with sweet potato fries.
