Spinach Lasagna
We had not made lasagna forever and needed a new recipe. This one did not disappoint. Anytime you don’t have to cook the noodles first is amazing. This dish is high protein and so easy to make! My kids absolutely love this recipe and I love that they are getting vegetables and protein. Make sure to follow the instructions closely on the way you layer the ingredients. The noodles have to be in between the sauce mixture and the cheese mixture so they will cook in the oven.
Ingredients:
-1 lb lean ground turkey
-2 cups spinach ( I will do more than this next time)
-1 c. ricotta cheese
-1 c. fat free cottage cheese
-2 c. mozzarella cheese
-1 c. shredded parmesan cheese
-10 lasagna noodles
-1 jar of favorite marinara sauce
Method:
Preheat oven to 400 degrees. Cook ground turkey and mix in marinara. Mix mozzarella and parmesan cheese together. Mix ricotta and cottage cheese in a different bowl.
Layer into the fan in the following order: sauce mix, noodles, ricotta/cottage cheese mix, spinach, mozzarella and parmesan mix. Repeat the layers one more time. Layering the lasagna this way makes it so you don’t have to cook the noodles beforehand.
Bake for 45 minutes covered, remove foil for 5 more minutes to brown the cheese. Let sit 10 minutes and enjoy!

Cook time: 50 minutes
Serving size” 1/9th of the pan.
