Chicken Bacon Club Pizza (CPK Copycat)
Okay you guys, I am overly obsessed with this Chicken Bacon Club Pizza. If you have never had the real thing at California Pizza Kitchen, you are missing out. One time on a trip to New York City, my sister and I ate this pizza every night (and sometimes for lunch too). It is that good! The real superstars of this club pizza are the avocados and the lettuce mixed with the mayonnaise. I am so glad that I finally found an easy homemade pizza dough recipe so we can make homemade pizza a regular thing. It’s usually weekly at our house. But everyone loves it and always eats it well so you can’t go wrong.
Here is what you’ll need:
your favorite pizza crust (mine is here.)
Olive oil (for drizzling)
1 chicken breast, cooked and cubed
2 c. shredded cheese (I use cheddar)
4 slices of bacon, cooked and chopped
1 large tomato, sliced
2 tbs. mayo
1 tsp. fresh squeezed lemon juice
1 avocado, sliced
Method:
Preheat oven to 500. Roll out crust on a pizza pan (I use this one here). Drizzle crust with olive oil and spread around using a brush. Salt if desired. Evenly spread cheese over the crust, followed by the chicken and the bacon. Bake 8-10 minutes until crust is golden and toppings are bubbly. Remove from oven and layer the tomatoes. In a small mixing bowl mix lettuce, mayo, lemon juice, and pepper if desired. Layer over top of tomatoes. Top pizza with sliced avocados.

Cook time: 10 minutes
