Pineapple Chicken Quesadillas
I honestly can not believe it’s September and school is back in session. Although at the same time it feels like the kids have been home FOREVER (thanks Covid). Now that school has started as well as the kids sports, we are relying on quick and easy dinner recipes. Our time line is usually maybe 30 minutes to get dinner on the table. This pineapple chicken quesadillas recipe makes the cut. However, it is crucial that I have chicken prepped and ready to go.
My favorite way to prep my chicken is this recipe here. It tastes SO good and literally goes well with anything. Make sure to at least season your chicken with garlic salt and pepper. Salsa chicken would taste really good in this recipe as well. I really feel like the tortillas make a big difference here too. My husband calls me a tortilla snob. I will only eat the uncooked tortillas from Costco. They are just so tasty and I can’t go back now. Can anyone back me up on this one? Alright let’s get to it!
Pineapple Chicken Quesadillas
Makes 4 full quesadillas
-8 tortillas
-16 oz chicken, prepared to preference (see above)
-1 can pineapple tidbits
-1 and 1/3 cups shredded mozzarella cheese (or whatever cheese you prefer)
-green peppers (optional)
Prepare the chicken to your liking. Layer a tortilla with the following: 4 oz chicken, 1/4 cup pineapple tidbits, and the green peppers. Sprinkle cheese overtop of layer the other tortilla on top. Place on a pan or griddle to melt the cheese. If low carb or calorie, you can do only 1 tortilla and fold it in half.
Calories for 1 quesadilla with 2 tortillas:
490 calories
52 g carbs
16 g fat
35 g protein
Calories for 1 quesadilla with 1 tortilla:
350 calories
29 g carbs
12 g fat
32 g protein
