Homemade Mac & Cheese Recipe

My 5 year old asked for mac & cheese for lunch randomly the other day. He’s only had it a handful of times so I was surprised he thought of it. I don’t buy the boxed stuff but luckily I had all the ingredients on hand to make our favorite easy homemade mac and cheese. It doesn’t get easier than this recipe .Seriously, it’s just as easy or even easier than the boxed stuff. I love shredding the cheddar cheese from a block for most recipes, but especially this one. Anyone else agree that freshly grated cheese tastes so much better than the pre-shredded stuff? This homemade mac & cheese is kid approved. The whole family will love it.

Homemade Mac & Cheese:

Serves 8-10

Prep time: 5 minutes

Cook time: 10 minutes

 

2 C. noodles (I use whole wheat elbow macaroni)

3 C. cheese- maybe a little more ( I use medium cheddar)

2 C. milk of choice (I use almond milk)

Method:

Add milk and noodles to a pot and turn medium-high to start a boil. Stir constantly until noodles are cooked. I usually turn it down to medium once it starts boiling. Stirring is important, if you don’t the milk will burn on the bottom of the pan. Once the milk is almost cooked out, add the cheese. My kids love adding broccoli to theirs and my husband and I add chicken to ours for extra protein.
