2 Ingredient Banana Pancakes

 

I have another delicious and easy breakfast idea to share with you guys. Can you tell that breakfast is my favorite? These 2 ingredient Banana Pancakes are so good and easy. I have recently started eating hardly any grains, sugar, and dairy in an attempt to heal my stomach issues. These pancakes are gluten free, dairy free, and sugar free. I used to make this recipe years ago and forgot about it until recently. I have been cooking these on my griddle and I am getting better results than I was in a pan. These banana pancakes will stick so make sure to spray with cooking spray before you cook. I usually add turkey bacon and veggies on the side for volume and extra protein. Green beans, mushrooms, and broccoli are the veggies I have been rotating through.

The topping choices are endless for these. They are yummy with nut butter, fruit syrup or maple syrup, or fresh fruit. I change it up day to day depending on what fits my macros that day (learn more about macros here). What are your favorite toppings for pancakes? I’m sure they could be delicious with chocolate chips too.

Banana Pancakes

 

Here is what you’ll need:

-1 ripe banana (I have had success with overripe and ripe)

-2 eggs

-cinnamon to taste (optional)

Blend all ingredients together. Spray a griddle or a pan REALLY WELL with cooking spray. Cook until desired consistency. Once the first side starts to bubble, I flip them over. They have been turning out a pretty golden brown and taste absolutely delicious. Top with your favorite syrup (this is mine) or almond butter (I love this one). This makes 4-5 small pancakes.
