Peanut Butter Protein Bread

Who gets a sweet tooth every night? I sure do! Every night after my kids are in bed, I love to relax on the couch and eat a treat. I have recently been on an ice cream kick. I am loving the Dreyer’s slow churned ice cream. It is so macro friendly. I decided I wanted something underneath my ice cream at night that was also macro friendly. Enter this peanut butter protein bread. It has great macros and I love the texture with ice cream. If you want to eat this plain, you will need to add more sweetener than is listed. But I definitely suggest layering it with ice cream and whatever toppings you enjoy! I love chocolate chips, granola, strawberries, and a drizzle of peanut butter.

Wet Ingredients
-1.5 c egg whites
-2 eggs
-2/3 c. milk (I use almond)
-optional- sweetener to taste- I use cinnamon

Dry ingredients
-1/2 c. coconut flour
-1/3 c. powdered peanut butter (this is my favorite brand)
-1 tsp baking powder

Preheat oven to 350 degrees. Whisk together all dry ingredients. In separate bowl, whisk wet ingredients together. Add dry ingredients to the wet ingredients and whisk until smooth. Pour into greased cake pan. Bake 30-35 minutes. Cut into 8 slices and store in fridge.
