Navajo Tacos

Happy Taco Tuesday. My obsession and love for tacos runs deep. It is not going anywhere soon. We have a variation of tacos at least once a week. This one is so delicious! It is a bit carb heavy but worth it if you can spare the carbs.

Recipe for the fry bread:

-2 c. white flour

-1 tsp. salt

-1 TBS. baking powder

-1 c. milk (I use almond)

2 TBS. oil (I use avocado oil but have used olive oil and it worked great too.)

Mix flour, salt, and baking powder together first. Stir in milk until dough forms. Add more flour if you need it to handle the dough. Knead on a floured surface until smooth. Let the dough rest 5 minutes. Seperate into 6 even pieces and flatten into discs 1/4 inch thick. Cook in oil until golden on both sides.

We like to top them with:

Ground turkey mixed with beans and salsa, cheddar cheese, tomatoes, lettuce, avocados, and fat free sour cream or Greek yogurt.
