Burrito Bowls

I am so excited to be sharing this easy dinner recipe today. This burrito bowls recipe is the most requested recipe by my husband. It is a favorite of my kids too. We have been trying to incorporate more slow cooker meals because they make getting dinner on the table so much easier. This recipe is versatile because it can be customized a couple different ways for your liking. Our favorite way to enjoy burrito bowls is putting it over rice but it would also be delicious in tortillas. You can also choose whatever toppings you enjoy.

I love this recipe because it is healthy, balanced, and great for a weight loss meal idea. This is an incredibly macro friendly meal. This burrito bowl meal is high protein which means you’ll be full for a while after you eat it. You can leave the rice out if you need your meal to be low carb or gluten free.  It is also full of healthy fats with the cheese and avocado. This meal can be dairy free if you leave off the cheese.

Here is what you’ll need:

-1 can black beans

-1 can corn

-1/3 c. water

-1/2 packet taco seasoning

-3-4 chicken breasts (i use frozen)

-salsa of choice

-rice (we like jasmine)

-toppings of choice- we like lettuce, tomatoes, cheddar cheese, avocado, and sour cream.

Drain the cans of beans and corn and add to a slow cooker. Click HERE for the slow cooker I use and love. Add 1/3 cup of water and taco seasoning and mix together well.

Layer the chicken on top and cover with salsa.

Cook on high for 3-4 hours or low for 6-8. When it is finished, shred the chicken and mix with corn and beans.
